The delicious pearl oyster (pleurotus ostreatus) mushrooms are one of the most common of the oyster mushrooms used by chef's world wide. This species is wide spread throughout the world and throws off various sub strains including the Blue Oyster Mushroom (pleurotus columbinus). The pearl oysters has a nice pearly white color which tend to darken as the mushroom matures. Also the more light introduced, the more white pearly color the caps will become. Not only is the pearl oyster mushroom delicious, but it's one of the easiest varieties of oyster (pleurotus) mushrooms to grow.
